Paal Payasam

Paal payasam is one of the most tastiest and rich sweet. It is a milk based sweet. Rice cooked in the milk gives a creamy texture. It is very special sweet made in ocassions and special gatherings.Moreover it very special as this is my post in my blog.

Servings 5-6 ppl

Requirements

Milk       half litre

Sugar       1 cup (200ml)

Rice          3 table spoons (preferably basmati rice)

Cashews  few

Procedure

Keep a pressure cooker in the stove and pour the milk. Keep it in low flame and stir occasionally

In the meanwhile keep a kadai and pour a tablespoon of ghee and  add rice to it.

You can use any rice except boiled rice. I have used basmathi rice as it gives a nice aroma to the payasam. 

Fry it till a nice aroma comes. After that keep it aside. 

In the same kadai add cashews and roast it till it becomes golden brown and keep it aside.

Stir the milk often.

Add the roasted rice in the mixie jar and pulse it. Don’t grind it to a fine powder it should be like rava texture

Once the milk comes to boiling add the powdered rice and mix it well the milk. Stir occasionally for the next 5 minutes.

Once it started boiling close the lid and put the whistle. Let it whistle for 5 to 6 then keep it in a low flame for 5 to 8 minutes . Then switch off the flame .

Once the pressure settles down open it  and keep it in slow flame and stir it..After 2 minutes of stirring add the a cup of sugar. 

After adding sugar, payasam will become wattery don’t worry in the end it will come to the correct consistency

Keep it in medium flame for 20 to 30mts and stir it often..

After 30 mts it will become slightly thicker now you can switch of the flame and add cashews to it.

Finally the yummy paal payasam is ready to serve 

Note:

You can add milkmaid also.. but if you add milkmaid reduce the sugar quantity

It ‘will taste excellent if u serve it chill.
